Duckling a l'Orange
Partially boned Long Island Duckling roasted until the skin is crisp and golden and the meat moist and tender. Served with a Gran Marnier sauce

Cornish Game Hen
Fresh semi boneless and stuffed with a chestnut and cranberry dressing

Braised Pheasant Breast
With onions, garlic, leeks, apricots, and raisins.

Braised Apple Chicken "Chicken Gloria"
Fresh Chicken Breast sautéed with apples, deglazed with brandy and finished with a sweet scented cider sauce.

Pan seared and finished in the oven topped with a sun dried cherry glaze.
